Healthy Banana Chocolate Chip Muffins with Flax, Oats and Bran

I have modified the original recipe slowly over time to add more fibre and reduce the sugar. I'm not sure I could do anything else to make them any healthier while still tasting like a delightful treat. These are a keeper!

Ingredients

  • 1.5 cups whole wheat flour
  • 1/2 cup ground flax seed
  • 1/2 unsweetened coconut
  • 1/2 cup bran
  • 1/2 cup quick oats
  • 1/2 chocolate chips
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 cup sugar
  • 1 egg
  • 5 medium-large, very ripe bananas, mashed
  • 1/3 cup vegetable oil
  • 1 grated apple

Method

Preheat your oven to 375 F.

In a medium bowl, mix together the flour, flax seed, coconut, bran, oats, cocolate chips, baking powder, baking soda, and salt.

In a large bowl, mix together the sugar, egg, mashed bananas, oil and apple.

Pour dry ingredients into the large bowl of wet ingredients and stir just to mix.

Scoop batter into muffin cups and bake for 16 minutes. Remove from oven and pan and allow them to cool on a rack.

Makes 12 large muffins.

Hot Tip:

I use these muffin cups (from Loblaws) and they are a game changer if you like to bake a lot of muffins and cupcakes. They do not stick at all, to the point that they are almost peeling off on their own as they come out of the oven. Amazing product. And no, I'm not an affiliate marketer for them...just a fan. 😀
